Hospitality and F&B
Hospitality and F&B Project Governance
Governing the guest experience from brief through pre-opening to first service.
AVIORE provides independent project governance for five-star hotels, restaurants, members destinations and guest environments. Hospitality is where the gap between practical completion and experiential completion is widest, and where governance of the final phase decides the opening the reviews will remember.

In hospitality, the experience is continuous.
A boutique is encountered; a hotel is inhabited. The guest experience runs without interruption from arrival through welcome, service, space, food and beverage, atmosphere and departure, and it is delivered as much by people and operation as by architecture. A hospitality project can therefore be built perfectly and still open wrong.
The hardest weeks are the last ones: construction completes, the delivery team demobilises, and an operating team that was never in the room inherits an environment under commercial pressure to open. The first ninety days fix the property's reputation and its review baseline, and on most projects nobody owns them.
Designers protect the design. Project managers protect the programme. Commercial teams protect the budget. Contractors protect execution. Operations inherit the result. Who protects the experience? That is the role AVIORE exists to hold.
What AVIORE governs
Experience
The guest journey end to end: arrival, welcome, circulation, the room, the table, the atmosphere and the departure.
Design
Operator standards, brand intent, interiors, lighting scenes and the sensory detail the property will be judged by.
Commercial
Cost, value engineering and procurement, judged against what each element is worth to the guest experience.
Delivery
Programme, contractors, FF&E, OS&E and the interface between construction and operation.
Activation
Pre-opening, commissioning to intent, team training, service choreography and first-period performance.
The guest journey lens
Every stage of the guest journey can be defined before it is built, and governed until it performs.
Arrival
The approach, the threshold and the first thirty seconds that set the property’s promise.
Welcome
How the guest is received and moved: the choreography of greeting, check-in and orientation.
The space
Rooms, suites and public areas performing as composed: light scenes to the hour, thresholds, sound and scent.
The table
Restaurants and bars where kitchen, service flow, back of house and atmosphere were designed as one system.
Departure and return
The last impression, the review it produces and the reason the guest books again.
Typical projects
Five-star hotels and resorts
New-build and repositioning programmes where operator standards and owner intent must hold together through delivery.
Restaurants and F&B
Destination restaurants and F&B programmes, from concept through kitchen delivery to first service.
Members destinations
Private clubs and members environments where discretion, service and atmosphere are the product.
Pre-opening programmes
The governed transition from construction to operation: commissioning, training and opening readiness.
How The AVIORE Method applies
01 Strategic Vision
Define what the property must achieve for its owner, operator and guest.
02 Experience Definition
Translate the intended guest experience into governable standards across every touchpoint. The output is the Experiential Brief, the single reference every later decision is held against.
03 Design Governance
Protect intent through design development, operator review and value engineering.
04 Delivery Discipline
Manage procurement and delivery against the experience baseline, holding every party accountable to intent, not just specification.
05 Activation and Performance
Govern pre-opening: commission to intent, train the team on why the environment is as it is, and measure the opening against the brief.
One vision. One governing thread. From first brief to first guest. The full framework is set out in The AVIORE Method.
Where AVIORE adds value
You already have a project team
AVIORE sits above an existing structure, providing independent governance across design, project management, cost, procurement and delivery, so every discipline performs against the intended experience rather than only its own remit.
A project losing its way
A Governance Readiness Audit establishes where the original vision, commercial position or delivery structure has become compromised, and the route back to intent.
Multiple projects, one standard
AVIORE holds one standard of guest experience across properties and markets while operators and local teams execute within it.
End-to-end leadership
AVIORE can lead the project directly, assembling and governing the specialist network required to execute it. Govern it, or deliver it: the intent is protected either way.
Representative experience
Projects shown were led by AVIORE's founder in previous senior roles and are presented as founder experience.

The Difference Between Project Management and Project Governance
One protects the programme. The other protects what the project was commissioned to achieve.
We govern a small number of projects each year.
Whether you are commissioning a new property, approaching a pre-opening or assessing a project under pressure, AVIORE governs the transition from construction to performance.
